Beef Chow Mein

A hearty meal packed with plenty of fibre, nutrition and vegetables. Make it a family favourite by serving with egg noodles or a side of brown rice.

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Onion (diced)
  • 3 Garlic Cloves (minced)
  • 450 grams Beef (sliced or cubed)
  • 1 tsp Fresh Ginger (peeled, grated)
  • 3 tbsp Soy Sauce (or to to taste)
  • 5 cups Dry Slaw mix

Directions

  1. Heat the oil in a large pan over medium-high heat. Cook the onions and garlic for two to three minutes. Add the beef, ginger. Cook for six to eight minutes, or until cooked through.
  2. Stir in the soy sauce and broccoli slaw. Cook for two minutes, or until vegetables are slightly cooked and everything is heated through.
  3. Divide onto plates and enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days.

Serving Size: One serving equals approximately 1 1/2 cups.

More flavour: Add a splash of orange juice and/or fish sauce. Top with roasted cashews or peanuts.
