Mackerel Salad Open Face Sandwich

An easy meal that provides healthy Omega-3's from the mackerel, calcium from the Greek yoghurt and fibre from the bread. A well balanced meal sure to keep you feeling satisfied.

Ingredients

  • 60 grams (1/2 tin) Tinned Mackerel
  • 1/4 cup Greek Yogurt
  • 1/2 Lemon (juiced)
  • 1/2 tsp Dijon Mustard
  • 1 stalk Celery (chopped)
  • 1 stalk Spring Onion (thinly sliced)
  • 1 tbsp Fresh Dill (finely chopped)
  • Salt & Black Pepper (to taste)
  • 2 slices Whole Grain Bread
  • 1/4 Tomato (sliced)

Directions

  1. Add the mackerel, yogurt, lemon juice, mustard, celery, onion, dill, salt, and black pepper to a bowl. Mash and stir until well combined.
  2. Toast bread and top with mackerel salad and sliced tomatoes.

Notes

Leftovers: Refrigerate the mackerel salad in an airtight container for up to three days. Spread onto bread when ready to serve.

Serving size:
One serving is equal to one piece of bread and approximately 1/2 cup of mackerel salad.

Other serving suggestions: Eat the mackerel salad as is or put it in a lettuce wrap or on top of crackers.
