Nut Free Pesto

Pesto is a herb sauce that instantly elevates any dish. Use it as a dressing, sauce or dip for other meals.

Ingredients

  • 3 cups Basil Leaves
  • 3 tbsp Sunflower Seeds
  • 1 tbsp Lemon Juice
  • 2 garlic cloves
  • 3/4 cup Parmesan Cheese
  • 1 tsp Salt
  • 1/2 cup Extra Virgin Olive Oil

Directions

  1. Add the basil, sunflower seeds, lemon juice, garlic, cheese and salt to a food processor.
  2. With the food processor running, slowly stream in the olive oil. Continue to blend for 30 seconds until pesto is smooth and emulsified. Season with additional salt or lemon juice, if needed.
  3. Transfer to a jar and enjoy!

Notes

Leftover: Store in an airtight container for up to four days. This pesto also freezes well.

More flavour: Add chili flakes.

Serve it with: 
Pasta, on roasted vegetables, as a salad dressing, on meat or as a dip.
