Sardines on Toast

An easy meal that provides healthy Omega-3's from the salmon and fibre from the bread.

Ingredients

  • 50g Sardines (half a tin)
  • 2 slices Sourdough Bread
  • 1/2 Tomato (sliced)
  • 1/2 cup Baby Spinach
  • 2 tsp Pesto
  • 1 tsp Extra Virgin Olive Oil

Directions

  1. Heat a medium sized frying pan and add Extra Virgin Olive Oil. When the pan is hot, gently add the sardines. Cook for 4-5 minutes on each side.
  2. Toast the sourdough bread while the sardines are cooking.
  3. Spread the pesto onto the toast and top with the baby spinach, tomato and sardines.

Notes

More flavour: add fresh coriander, chili flakes, salt and pepper.
