Seeded Grain Crackers

These crunchy gluten-free crackers are full of flavour and healthy fats.

Ingredients

  • 1 cup Brown Rice (cooked)
  • 1 cup Quinoa (cooked)
  • 1/4 cup Sesame Seeds
  • 1/4 cup Whole Flaxseeds
  • 1/4 cup Nutritional Yeast
  • 2 tbsp Dried Onion Flakes
  • 2 tbsp Soy Sauce (or tamari sauce)
  • 1 tbsp Rosemary (fresh)

Directions

  1. Soak flaxseeds for 20 minutes.
  2. Using a food processor, blend all ingredients (including flax seeds) on medium speed. Blend until it's doughy and sticky but there are still chunks as this will give the crackers more texture. If it's too dry, slowly add water until it becomes doughy.
  3. Roll out the dough. It needs to be quite thin, around 5mm. Put the dough between two sheets of greaseproof paper to make it easier.
  4. Using a cookie cutter, cut circle shapes out of the dough. There should be around 40 crackers.
  5. Place into oven on lowest temp for 45 minutes or until crunchy.
  6. Enjoy with guacamole, salsa or preferred dip of choice.

Notes

Leftovers: Store in an airtight container for up to a week at room temperature.

No Rosemary:
Use thyme or oregano instead.
